As an expression of dry, minerally, flinty Northern Burgundy displaying the features of the terroir in every gulp, these wines are close to perfect. Where practical, the wines are bottled under Stelvin screw caps.
Be aware that these are truly artisan wines and Clotilde does not filter or stabilise her wines, believing that to do so means to compromise flavour.
This can mean that over-chilling for too long may precipitate some harmless crystal sediment. Chilling on ice to order overcomes this but, better still, drink them a bit warmer!
Contrary to popular belief, the wines from Petit Chablis are not necessarily inferior to Chablis proper, it is so called because the area producing it is smaller. This wine was made by Clotilde Davenne from her own vineyard. She is a multi-award winning winemaker.
The only area in Burgundy permitted to produce Sauvignon and fairly unusual in the UK, this is a style of the variety that could become more popular. The style is dry and full-bodied but without the obvious gooseberry flavours of some New World Sauvignons. Delicious.
