A bit like liquid Christmas Pudding, This natural sweet wine that takes its name from the variety of grape with which it is made, although it is also known as raisin wine. It is the sweetest wine in the range.

Oxidative ageing wine, obtained by the partial fermentation of previously raisined Pedro Ximénez grape musts, with 2-3 years of aging using the traditional system of soleras and criaderas in American oak casks. It is very sweet, its alcohol content is 15% ABV.

Dark mahogany in colour, dense and unctuous, it presents powerful notes of fresh raisins and other notes of raisin. In the mouth it is intense, sweet and tasty, with an excellent acid-sweet balance that makes it fresh and harmonious and that gives it great volume and persistence.

A modern-cut Pedro Ximénez like this one invites you to be creative in your pairing and not limit it exclusively to desserts. Appetisers, cheeses, pâté or stuffed meats will harmonise perfectly with this wine.
